Spiced Apple Muffins

  1. Preheat the oven to 400u0b0F. Generously grease a 12-cup muffin pan.
  2. Place the apples, lemon juice and 1 tbsp water in a medium saucepan. Cook on low heat until reduced to a pulp; do not sweeten.
  3. Combine the flours, spice, baking powder, salt, sugar, raisins and dates in a large bowl, stirring until well mixed and using your fingers to separate out the raisin and date pieces. Add the egg, butter and hot apple mixture; mix lightly until combined. Spoon into prepared muffin pan.
  4. Bake for 20-25 mins, until well risen and browned. Cool in pan 5 mins.
  5. Dip the tops into the lemon juice, then the raw sugar. Serve warm or at room temperature.
