Spiced Apple Muffins
- 2 large cooking apples, peeled and sliced
- 1 None lemon, juiced
- 1 1/3 cups flour
- 1/3 cup whole wheat flour
- 1 tbsp mixed spice, such as pumpkin pie spice
- 1 tsp baking powder
- 1/4 tsp salt
- 1/2 cup granulated sugar
- 1/2 cup golden raisins
- 6 None pitted dates, chopped
- 1 None egg, lightly beaten
- 8 tbsp (1 stick) butter, melted
- None None FOR THE TOPPING
- 2 tbsp lemon juice
- 1/3 cup raw sugar
- Preheat the oven to 400u0b0F. Generously grease a 12-cup muffin pan.
- Place the apples, lemon juice and 1 tbsp water in a medium saucepan. Cook on low heat until reduced to a pulp; do not sweeten.
- Combine the flours, spice, baking powder, salt, sugar, raisins and dates in a large bowl, stirring until well mixed and using your fingers to separate out the raisin and date pieces. Add the egg, butter and hot apple mixture; mix lightly until combined. Spoon into prepared muffin pan.
- Bake for 20-25 mins, until well risen and browned. Cool in pan 5 mins.
- Dip the tops into the lemon juice, then the raw sugar. Serve warm or at room temperature.
