Sesame Chicken With Corn And Potato Salad
- 1 None chicken breast, sliced lengthwise into 6 strips
- 1/4 cup sesame seeds
- 2 tbsp vegetable or olive oil
- 4 None baby potatoes, thinly sliced
- 1 1/2 cups canned corn kernels, drained
- 1/2 None small red bell pepper, thinly sliced
- 2 None spring onions, thinly sliced
- 1/4 cup sour cream
- 1 tbsp lemon juice
- 2 tbsp fresh cilantro, chopped
- Coat chicken in sesame seeds. Set aside.
- Heat oil in a frying pan over medium heat. Add potatoes and cook for 3 mins, or until golden brown and cooked through. Set aside. Add corn, red pepper and onions. Season and toss to combine. Add chicken and saute for 3-4 mins, or until golden. Mix with potatoes and set aside.
- Whisk together sour cream and lemon juice. Add 1 tbsp cilantro. Distribute salad between serving plates. Top with chicken, sour cream and remaining cilantro. Serve immediately.
