Thai Chicken Fettucine Salad
- 1 c. picante sauce
- 1/4 c. chunky style peanut butter
- 2 Tbsp. honey
- 2 Tbsp. orange juice
- 1 tsp. soy sauce
- 1/2 tsp. ground ginger
- 6 oz. dry fettucine, cooked per pkg. directions and drained
- 3 chicken breast halves, boned, skinned and cut into 1-inch pieces
- 2 Tbsp. vegetable oil
- 1/4 c. coarsely chopped cilantro
- 1/4 c. peanut halves
- 1/4 c. thin red bell pepper strips
- Combine picante sauce, peanut butter, honey, orange juice, soy sauce and ginger in small saucepan.
- Cook and stir over low heat until blended and smooth.
- Reserve 1/4 cup.
- Toss remaining sauce mixture with hot cooked fettucine.
- Cook chicken in oil until browned and cooked through (about 5 minutes).
- Add reserved picante sauce mixture and mix well.
