Brown Fried Rice
- 1 cup medium-grain brown rice
- 2 tbsp vegetable oil
- 3 None eggs, lightly beaten
- 1 tsp sesame oil
- 1 clove garlic, crushed
- 1 small onion, finely chopped
- 1 medium carrot, finely chopped
- 1 medium red pepper, finely chopped
- 1/2 cup frozen peas, thawed
- 3 oz ham, sliced
- 3 None green onions, thinly sliced
- 2 cups bean sprouts, rinsed
- 2 tbsp light soy sauce
- 1 tbsp sesame seeds, toasted
- Cook rice in a large saucepan of boiling water for 30 mins or until tender. Drain.
- Heat a wok or large skillet on medium-high heat. Add half the oil; swirl to coat surface. Add egg; cook and stir for 1-2 mins, gently scrambling. Transfer to a heatproof bowl.
- Add remaining oil and sesame oil to wok. Stir-fry garlic, onion, carrot and pepper for 2-3 mins or until soft. Add rice, peas, ham, onion, sprouts and soy sauce; stir-fry until heated through. Add egg; toss to combine. Serve sprinkled with sesame seeds.
