Spiced Pumpkin Muffins
- 1/2 c. packed brown sugar
- 1/2 c. shortening
- 1 egg
- 1/2 c. canned or mashed cooked pumpkin
- 1 1/2 c. sifted flour
- 3 tsp. baking powder
- 1/2 tsp. salt
- 1/2 tsp. cinnamon powder
- 1/2 tsp. nutmeg powder
- 1/4 tsp. ginger powder
- 3/4 c. milk
- Preheat oven to 375u0b0 (190u0b0C).
- Grease 12-muffin pan.
- Cream together the sugar and shortening, working it until light and fluffy.
- Add egg to the mixture and beat.
- Add pumpkin to mixture; mix again until combined well.
- Sift together the flour, baking powder, salt and spices.
- Add this dry mixture alternately with milk to the pumpkin mixture until all ingredients are stirred in. Beat well after each addition.
- Fill greased muffin cups 2/3 full. Bake on center shelf for about 25 minutes, or until done.
- Makes 12 small or 10 medium muffins.
