Marble Loaf With Caramel Icing

- 1/2 cup butter, at room temperature, chopped
- 3/4 cup + 1 tbsp sugar
- 2 None eggs
- 2 cups self-rising flour, sifted
- 1 cup milk
- None None Pink food coloring
- 2 tbsp cocoa powder
- None None Caramel Icing
- 1/2 cup brown sugar
- 1/4 cup butter
- 1 tbsp heavy cream
- 2/3 cup powdered sugar, sifted
- None None Chocolate curls, to decorate
- Preheat oven to 350u0b0F. Lightly grease a 4 x 8 inch loaf pan. Line base and sides with parchment paper.
- In a large bowl, beat butter and sugar together until pale and creamy. Add eggs, one at a time, beating well after each addition.
- Lightly fold flour into creamed mixture alternately with milk, beginning and ending with flour. Divide mixture into three.
- Leave one portion plain. Add a few drops of pink food coloring to the second portion. Combine cocoa powder and 2 tbsp warm water and stir into third portion.
- Spoon alternating colors into pan until two-thirds full; swirl gently with a skewer. Bake 40-45 minutes, until a skewer inserted in the center comes out clean. Cool in pan 5 minutes, then turn onto a wire rack to cool completely.
- For the caramel icing: Heat brown sugar and butter in a saucepan on low, stirring until sugar dissolves. Blend in cream and cook, stirring, for 2 minutes. Whisk in powdered sugar until smooth, adding a few drops of hot water if needed. Cool slightly before spreading over cooled cake. Top with chocolate curls.
