Beef Fajitas
- None None FOR THE FRESH TOMATO SALSA
- 1 large tomato, seeded and finely chopped
- 1 small red onion, finely chopped
- 2 tsp finely chopped drained jalapeno chili peppers (optional)
- 2 tbsp finely chopped fresh cilantro
- 2 tsp lemon juice
- None None FOR THE BEEF FAJITAS
- 10 oz beef sirloin steak
- 8 None flour tortillas (6-inch), warmed
- 1 small red pepper, seeded and thinly sliced
- 1 small green pepper, seeded and thinly sliced
- 1 small yellow pepper, seeded and thinly sliced
- 1 medium red onion, thinly sliced
- 1 1/2 cups finely shredded iceberg lettuce
- 1/2 cup coarsely grated Cheddar cheese
- For the fresh tomato salsa, combine all ingredients in a medium bowl. Season to taste.
- Cook the beef on a heated oiled grill pan (or in a skillet or on the grill) for about 3 mins on each side or until cooked to desired doneness. Cover the beef and let stand for 10 mins, then slice thinly.
- Meanwhile, cook the peppers and onion in the same pan until the vegetables are tender.
- Divide the beef, pepper and onion among the tortillas. Top with lettuce, cheese and fresh tomato salsa. Roll to enclose the filling.
