Sticky Pork With Brown Rice
- 1 tbsp hoisin sauce
- 2 tsp soy sauce
- 2 tsp brown sugar
- 2 tsp grated ginger
- 12 oz pork tenderloin
- 1 cup brown rice
- 5 oz snow peas, trimmed and blanched
- 1 bunch broccolini, trimmed and blanched
- 1 None long red chili pepper, thinly sliced
- 1 tsp sesame seeds, toasted
- Combine hoisin, soy, sugar and ginger in a large bowl; mix well. Add pork; turn to coat in marinade. Refrigerate 30 mins.
- Meanwhile, cook rice in a medium saucepan of boiling salted water 30-35 mins, until just tender; drain well. Return to the saucepan. Cover and let stand 10 mins.
- Preheat the oven to 400u0b0F. Heat an ovenproof nonstick skillet on high heat. Remove pork from marinade, reserving marinade. Cook pork 4-5 mins, turning, until seared. Add marinade to skillet and cook 1 min. Transfer skillet to oven.
- Bake 8-10 mins, until cooked to desired doneness. Let stand, loosely covered with foil, 5 mins.
- Slice and serve with rice and vegetables. Sprinkle with chili pepper and sesame seeds.
