Chocolate Pudding Cakes
- 8 tbsp (1 stick) butter, at room temperature
- 1/2 cup sugar
- 2 None eggs
- 1 tsp vanilla extract
- 2 tsp instant coffee
- 1 tbsp milk, warmed
- 1 1/4 cups self-rising flour, sifted
- 4 oz semi-sweet chocolate, melted
- None None Ice cream or whipped cream, to serve
- None None FOR THE SAUCE
- 1/2 cup packed brown sugar
- 1 tbsp unsweetened cocoa powder
- Preheat the oven to 350u0b0F. Lightly grease four 1 1/4-cup baking dishes, or one 5-cup baking dish.
- Beat butter and sugar in a large bowl with an electric mixer until light and fluffy. Add eggs, one at a time, beating well after each addition. Beat in vanilla.
- Dissolve coffee in milk. Fold flour into batter alternately with milk mixture. Stir in melted chocolate. Spoon evenly into dishes.
- For the sauce, combine 1 cup boiling water, brown sugar and cocoa powder in a medium bowl. Pour evenly over each pudding.
- Bake 15-20 mins (35-40 mins for large dish), until puffed. Serve hot, with ice cream or whipped cream.
