Vegan Cherry Brownies
- 600 g plain flour
- 250 g caster sugar
- 100 g cocoa powder, plus extra for dusting
- 2 tsp vanilla extract
- 2 tsp baking powder
- 2 tsp bicarbonate of soda
- 250 ml soya milk
- 250 ml sunflower oil
- 250 ml maple syrup
- 2 cans (425g each) cherries in syrup, drained and syrup reserved
- 200 g vegan dark chocolate, finely chopped
- None None Whipped soya cream, to serve
- Preheat the oven to 350u0b0F. Grease a 12 x 8 inch baking tray. In a bowl, mix the flour, sugar, cocoa powder, vanilla extract, baking powder and baking soda. In a separate bowl, mix the soy milk, oil, maple syrup and 3/4 cup cherry syrup.
- Gradually beat the liquid mixture into the dry mixture with the whisk of a mixer. Stir in the cherries and chocolate. Spoon into the tray and smooth out. Bake for 30 minutes, until a skewer comes out clean.
- Allow to cool. Cut into 56 squares and dust with cocoa powder. Serve with whipped soy cream.
