Saucy Pork Chop

  1. Place butter in a shallow 1-quart casserole dish.
  2. Microwave at High for 20 seconds, or until melted.
  3. Add mushrooms, onion and green pepper; cover and microwave at High for 2 to 3 minutes, or until vegetables are tender, stirring once.
  4. Stir in tomato, water, lemon juice and seasonings.
  5. Place pork chop over mixture and spoon a small amount of vegetable mixture over pork chop.
  6. Cover; microwave at Medium (50% power) for 8 to 10 minutes.
  7. Turn pork chop over; cover and continue to microwave at Medium for 5 to 10 minutes, or until meat next to bone loses pink color.
  8. Serve pork chop over rice; garnish with green pepper ring, if desired.
  9. Yields 1 serving.
