Saucy Pork Chop
- 1 tsp. butter or margarine
- 1/4 c. sliced fresh mushrooms
- 1 Tbsp. chopped onion
- 1 Tbsp. chopped green pepper
- 1 small tomato, peeled and finely chopped
- 1/4 c. water
- 1/2 tsp. lemon juice
- 1/8 tsp. garlic powder
- 1/8 tsp. ground oregano
- 1/8 tsp. dried whole thyme
- 1/8 tsp. salt
- 1/8 tsp. pepper
- 1 (1/2 to 3/4-inch) pork chop
- hot cooked rice
- green pepper ring (optional)
- Place butter in a shallow 1-quart casserole dish.
- Microwave at High for 20 seconds, or until melted.
- Add mushrooms, onion and green pepper; cover and microwave at High for 2 to 3 minutes, or until vegetables are tender, stirring once.
- Stir in tomato, water, lemon juice and seasonings.
- Place pork chop over mixture and spoon a small amount of vegetable mixture over pork chop.
- Cover; microwave at Medium (50% power) for 8 to 10 minutes.
- Turn pork chop over; cover and continue to microwave at Medium for 5 to 10 minutes, or until meat next to bone loses pink color.
- Serve pork chop over rice; garnish with green pepper ring, if desired.
- Yields 1 serving.
