Hot Smoked Salmon Salad
- 13.5 oz fettuccine pasta
- 14 oz hot-smoked salmon, flaked into large pieces
- 3.5 oz baby arugula
- 1 None medium avocado, roughly chopped
- 1 None cucumber, halved, thinly sliced
- 1 small bulb fennel , trimmed, thinly sliced
- 2 oz baby capers, drained, rinsed
- None None FOR THE LEMON-MUSTARD DRESSING
- 1 tbsp Dijon mustard
- 2 tsp sugar
- 2 tbsp olive oil
- 1 tbsp lemon juice
- Cook pasta in boiling salted water until tender. Rinse under cold water until cool then drain.
- Meanwhile, combine salmon in a large serving bowl with arugula, avocado, cucumber, fennel and capers.
- To make the lemon-mustard dressing, whisk together mustard, sugar, olive oil and lemon juice. Add to salmon mixture along with pasta and toss to combine.
