Hot Smoked Salmon Salad

  1. Cook pasta in boiling salted water until tender. Rinse under cold water until cool then drain.
  2. Meanwhile, combine salmon in a large serving bowl with arugula, avocado, cucumber, fennel and capers.
  3. To make the lemon-mustard dressing, whisk together mustard, sugar, olive oil and lemon juice. Add to salmon mixture along with pasta and toss to combine.
