Herbed Scrambled Eggs On Croissants

  1. Preheat oven to 325u0b0F. Line a baking tray with parchment paper. Place croissants on prepared tray along with tomatoes. Lightly coat with oil and bake for 10-12 mins, or until croissants are heated through.
  2. Meanwhile, combine eggs and cream in a medium bowl. Season. Beat lightly with a whisk to combine.
  3. Melt butter in a large nonstick frying pan over low heat. Add egg mixture and cook for 30 seconds. Gently stir egg mixture from outer edges to center until egg forms creamy curds. Stir in chives.
  4. Cut croissants in 1/2 and top with ham then scrambled eggs. Serve with roasted tomatoes.
