Caramel Apple Crumb Cake

  1. Preheat oven to 400u0b0F. Sprinkle lemon juice over the sliced apples. Grease and flour a 10 x 13 inch baking pan. Whip the cream in a mixing bowl until semi-stiff, adding 1 cup sugar and vanilla extract gradually. Add the beaten egg, 3 2/3 cups flour and baking powder, stirring until smooth. Pour into the prepared pan and arrange the apple slices on top. Bake for 15 mins.
  2. To make the crumble topping, melt the butter over low heat. In a mixing bowl, combine 2 cups flour, the remaining sugar and a pinch of salt, then stir in the melted butter. Knead until the mixture has a crumbled texture, then stir in the chopped caramels. Sprinkle the crumble with 1 tbsp flour and shake vigorously to combine.
  3. Scatter the crumble on top of the cake and return to the oven for another 20 mins. Cool before serving.
