Broiled Steaks With Anchovy Butter And Lemony Potato Wedges
- None None FOR THE LEMONY POTATO WEDGES
- 3 1/4 lbs baking potatoes, each sliced lengthwise into 8 wedges
- 1/4 cup olive oil
- 2 cloves garlic, crushed
- 1 tbsp finely grated lemon peel
- 2 tsp sea salt flakes
- None None FOR THE ANCHOVY BUTTER
- 6 tbsp (3/4 stick) butter, softened
- 6 None anchovy fillets, coarsely chopped
- 2 tbsp finely chopped fresh flat-leaf parsley
- None None FOR THE STEAKS
- 6 None sirloin steaks
- 2 tbsp olive oil
- For the potato wedges, preheat the oven to 425u0b0F. Line a baking pan with parchment paper. Boil, steam or microwave potatoes until slightly softened. Drain and pat dry with paper towels. Combine potatoes, oil, garlic, lemon peel and salt in large bowl. Place wedges on prepared pan in a single layer. Bake for 50 mins, or until browned lightly.
- For the anchovy butter, mash all ingredients in a small bowl with a fork until well combined. Spoon mixture onto a sheet of plastic wrap. Roll tightly to make a log. Refrigerate until firm.
- About 10 mins before wedges are cooked, preheat the broiler. Brush steaks all over with oil. Broil until cooked to desired doneness. Cover and stand for 5 mins.
- Serve steaks topped with sliced anchovy butter and potato wedges.
