Chunky Vegetable And Pasta Soup

  1. Heat olive oil in a large saucepan. Saute bacon, onion, potato and garlic for 4-5 mins, until onion is tender. Add carrots and celery. Cook over high heat, stirring, for 4-5 mins, until vegetables begin to caramelize. Add chicken stock and cannellini beans. Simmer for 10 mins. Add orzo and simmer for 10-15 mins, until pasta is tender. Add Swiss chard. Season.
  2. Top with grated Parmesan and serve with crusty bread.
