Chunky Vegetable And Pasta Soup
- 1 tbsp olive oil
- 2 slices bacon, chopped
- 1 None onion, chopped
- 1 None potato, chopped
- 2 cloves garlic, minced
- 2 None carrots, chopped
- 2 stalks celery, chopped
- 6 cups chicken stock
- 1 (13.5 oz) can cannellini beans, drained, rinsed
- 1 oz orzo
- 3.5 oz Swiss chard, chopped
- None None Parmesan cheese, grated, to serve
- None None crusty bread, to serve
- Heat olive oil in a large saucepan. Saute bacon, onion, potato and garlic for 4-5 mins, until onion is tender. Add carrots and celery. Cook over high heat, stirring, for 4-5 mins, until vegetables begin to caramelize. Add chicken stock and cannellini beans. Simmer for 10 mins. Add orzo and simmer for 10-15 mins, until pasta is tender. Add Swiss chard. Season.
- Top with grated Parmesan and serve with crusty bread.
