Sausage And Fries With Curry Ketchup
- 2 tbsp sunflower oil
- 1 None onion, finely diced
- 2 tbsp tomato puree
- 4 tbsp brown sugar
- 1-2 tbsp curry powder
- 400 g can chopped tomatoes
- 4 tbsp white wine vinegar
- 1-1.5 litres vegetable oil, for frying
- 1 kg potatoes, peeled and cut into chips
- 4 None thick sausages
- To make the ketchup, heat 1 tbsp oil in a saucepan, add the onion and saute for 3-4 mins. Stir in the tomato puree, sugar and 1-2 tbsp curry powder. Mix in the chopped tomatoes and vinegar and season. Simmer for 10-15 mins.
- Heat the vegetable oil to 300u0b0F in a large saucepan. Fry the potatoes for 3 mins in batches. Then remove and spread on a baking sheet. Heat 1 tbsp oil in a frying pan, add the sausages and fry for 10-15 mins until cooked through. Meanwhile, Increase the temperature of the frying oil to 325u0b0F and fry the potatoes one more time for 4-5 mins, in batches. Season with salt. Divide the fries and sausages between 4 plates and serve with the ketchup.
