Seafood And Cheese Pasta
- 9 oz large pasta shells
- 1/2 head broccoli, cut into small florets
- 1/4 cup butter
- 1 None onion, finely chopped
- 2 cloves garlic, crushed
- 1/3 cup all-purpose flour
- 1/2 cup milk
- 10.5 oz firm white fish fillets, chopped
- 3.5 oz frozen peas and corn, thawed
- 2.75 oz white Cheddar cheese, grated
- 1.5 oz Parmesan, grated
- Preheat oven to 350u0b0F. Arrange six 1 cup ramekins or baking dishes on a baking sheet.
- Cook pasta according to package instructions. Add broccoli for final minute. Drain well.
- Meanwhile, prepare the sauce: In a medium saucepan, melt butter. Saute onion and garlic for 2-3 minutes or until onion is tender. Stir in flour and cook for 1 minute. Remove from heat. Gradually add milk, stirring until smooth. Return to heat. Cook, stirring, until sauce boils and thickens. Simmer 3 minutes.
- Add fish, peas and corn, and pasta to sauce. Simmer for 1-2 minutes. Stir in half the combined cheese.
- Spoon mixture into ramekins. Sprinkle with remaining cheese. Bake for 15-20 minutes until golden.
