Almond Amaretto Cake
- 1 c. butter
- 2 c. sugar
- 3 c. sifted flour
- 1/2 tsp. salt
- 2 tsp. baking powder
- 1 c. milk
- 6 egg whites
- 1/2 tsp. vanilla
- 2 tsp. almond extract
- In mixer whip butter until it is light and fluffy.
- Add sugar, then almond and vanilla extracts.
- Sift flour with salt and baking powder.
- Add 1/3 cup flour mixture to the butter and sugar mixture, then 1/2 milk.
- Blend well.
- Add 1/3 more flour, the milk and then the last of the flour.
- Mix well.
- Whip egg whites until stiff but not dry.
- Fold whites into cake mixture and divide into 3 (9-inch) cake pans that have been greased and floured.
- Bake in 350u0b0 oven for 25 to 30 minutes, until cake is firm.
- Let stand a few minutes and then remove from pans to cake racks to cool. Frost with Almond Butter Cream Frosting.
