Bread Pudding With Apple Compote
- 8 None slightly stale bread rolls, torn into pieces
- 6 None eggs
- 2 1/2 cups reduced-fat milk
- 1 cup apple juice
- 1 1/3 cup cranberry juice
- 3 None apples, peeled, cored and cut into wedges
- 2 tbsp custard powder
- 1-2 tbsp sugar, according to taste
- 5 tsp butter
- 1 tsp ground cinnamon
- 2 tbsp powdered sugar
- Place the bread in a large bowl. In a small bowl, beat the eggs, milk and a pinch of salt. Pour over the bread, cover and allow to soak for 1 hour, stirring occasionally.
- Preheat the oven to 400u0b0F. In a saucepan, bring the apple and elderberry juice to the boil. Add the apples and simmer for 2 mins, then lift out with a slotted spoon. Add the custard powder, 1-2 tbsp sugar and 6 tbsp water to the juice and stir until smooth. Add the apples and allow the compote to cool.
- Melt 2 tsp butter in an ovenproof serving dish and spoon in the bread mixture. Bake for 20 mins. Remove from the oven and break up with 2 forks.
- Melt 3 tsp butter in a frying pan and fry the bread in batches until browned. Mix the cinnamon and powdered sugar and dust over the bread pudding. Serve with the apple compote.
