Orange, Almond And Cherry Pudding Cake
- 3/4 cup sliced almonds
- 1/2 cup self-rising flour
- 3/4 cup plus 1/3 cup packed brown sugar
- 3/4 cup milk
- 1 tsp grated orange peel
- 3 tbsp butter, melted, plus 4 tbsp, chopped
- 1 can (15 oz) pitted cherries in syrup, drained well on paper towels
- 1/2 cup freshly squeezed orange juice
- None None Powdered sugar and vanilla ice cream, to serve
- Preheat the oven to 350u0b0F. Grease a 2-quart baking dish.
- Finely chop half the almonds; place in a large bowl. Add flour, 3/4 cup brown sugar, milk, orange peel and 3 tbsp melted butter; stir to combine. Spoon into baking dish. Top with cherries, pushing in gently.
- Mix 1 cup boiling water, orange juice, 1/3 cup brown sugar and 4 tbsp butter in a medium bowl, stirring until butter melts.
- Carefully pour over the back of a spoon onto pudding mixture. Sprinkle with remaining almonds.
- Bake for 25-30 mins or until golden and firm. Let stand for 5 mins. Dust with powdered sugar. Serve with softened vanilla ice cream (ice cream melts to form a vanilla sauce).
