Orange, Almond And Cherry Pudding Cake

  1. Preheat the oven to 350u0b0F. Grease a 2-quart baking dish.
  2. Finely chop half the almonds; place in a large bowl. Add flour, 3/4 cup brown sugar, milk, orange peel and 3 tbsp melted butter; stir to combine. Spoon into baking dish. Top with cherries, pushing in gently.
  3. Mix 1 cup boiling water, orange juice, 1/3 cup brown sugar and 4 tbsp butter in a medium bowl, stirring until butter melts.
  4. Carefully pour over the back of a spoon onto pudding mixture. Sprinkle with remaining almonds.
  5. Bake for 25-30 mins or until golden and firm. Let stand for 5 mins. Dust with powdered sugar. Serve with softened vanilla ice cream (ice cream melts to form a vanilla sauce).
