Spicy Black-Eyed Peas
- 1 lb. frozen or canned black-eyed peas
- 2 medium onions, finely chopped
- 2 medium tomatoes, finely chopped
- 1/2-inch square piece ginger root, minced
- 2 hot green chilies, cut in 1-inch long pieces
- 1 Tbsp. vegetable oil
- 1 tsp. red chili pepper
- 2 tsp. ground coriander powder
- 1/2 tsp. salt
- 1/4 tsp. ground turmeric powder
- Heat oil.
- When hot, add chopped onions, ginger and chilies. Saute the mixture on medium heat until the onions become tender. Add chopped tomatoes and all the spices.
- Saute a few more minutes.
- Add black-eyed peas; cook the mixture on medium heat for about 30 minutes, stirring occasionally.
- Add 1 to 2 tablespoons of water to prevent sticking.
- Take away from heat and garnish with chopped cilantro.
