Mixed Greens With Basil And Lime Dressing

  1. Cook potatoes in boiling, salted water for 15-20 mins, until just tender. Add beans and cook for 3 mins. Drain. Let cool then thinly slice.
  2. Combine potatoes, beans, zucchini, tomatoes, fennel, spring onions, red onion and lettuce in a salad bowl.
  3. Whisk together basil, lime juice, vinegar, olive oil and sugar. Season then drizzle over salad and toss to combine.
