Citrus Pork With Pea Couscous
- 2/3 cup couscous
- 4 tsp vegetable or olive oil
- 1/2 tsp Moroccan spice mix
- 2/3 cup boiling vegetable stock
- 2/3 cup frozen baby peas, thawed
- 1/2 small red onion, finely chopped
- 1 tbsp slivered almonds, toasted
- 1 tbsp chopped parsley
- 2 None pork loin chops
- 2 tbsp orange marmalade
- 2 tbsp freshly squeezed orange juice
- Place couscous, 2 tsp of the oil and spice mix in a medium bowl; stir in boiling stock. Cover with plastic wrap. Let stand for 5 mins, or until liquid is absorbed. Using a fork, fluff and separate grains. Add peas, onion, almonds and parsley; stir to combine.
- Meanwhile, heat remaining 2 tsp oil in a medium skillet on medium heat. Add pork; cook for 2-3 mins each side, or until just cooked. Add marmalade and juice and cook, turning pork, for a further 2-3 mins, or until pork is glazed.
- Spoon couscous mixture onto plates. Top with pork; drizzle with pan juices.
