Citrus Pork With Pea Couscous

  1. Place couscous, 2 tsp of the oil and spice mix in a medium bowl; stir in boiling stock. Cover with plastic wrap. Let stand for 5 mins, or until liquid is absorbed. Using a fork, fluff and separate grains. Add peas, onion, almonds and parsley; stir to combine.
  2. Meanwhile, heat remaining 2 tsp oil in a medium skillet on medium heat. Add pork; cook for 2-3 mins each side, or until just cooked. Add marmalade and juice and cook, turning pork, for a further 2-3 mins, or until pork is glazed.
  3. Spoon couscous mixture onto plates. Top with pork; drizzle with pan juices.
