Fancy Green Beans

  1. Blanch green beans in boiling salted water for 3-4 mins. Shock in ice water until cool then drain.
  2. In a small frying pan, heat 1 tbsp olive oil. Add breadcrumbs and cook for 30 seconds, until golden brown. Set aside to cool then mix in cheese.
  3. Wipe out frying pan. Heat remaining olive oil over medium heat. Cook red pepper and onion for 2 mins, or until tender. Add vinaigrette, lemon zest, maple syrup and green beans. Cook for 1 min, tossing, until heated through. Arrange on a serving plate and sprinkle with breadcrumbs and almonds.
