Honey, Date And Nut Cake
- 1 1/4 cups honey
- 1 tbsp golden syrup or maple syrup
- 2 1/2 tbsp butter
- 9 oz chopped dates
- 1 cup chopped walnuts
- 3 tbsp chopped almonds
- 3 tbsp whole wheat self-rising flour, sifted
- 1 tsp ground ginger
- 1/2 tsp pumpkin pie spice
- Combine honey, 1 cup water, golden syrup and butter in a saucepan. Stir constantly over medium heat, without boiling, until butter is melted. Remove from heat and let cool to room temperature.
- Preheat oven to 350u0b0F. Grease a deep 7 inch square cake pan and line base with paper. Grease paper.
- In a large bowl, combine dates, walnuts and almonds. Add flour and spices and toss to combine. Add honey mixture and stir until combined. Transfer to prepared pan and bake for 50 mins, or until a skewer inserted in the center comes out clean. Cover cake with foil and let cool in pan.
