Curried Salmon And Zucchini Terrine

  1. Preheat oven to 350u0b0F. Lightly grease a 4 x 8 inch loaf pan. Line base and two long sides with parchment paper.
  2. Blanch zucchini in a large pan of boiling water 2-3 minutes; drain on paper towel.
  3. In a bowl, combine eggs, cream, chives and curry powder. Season to taste.
  4. Line base of prepared pan with 1/3 of the zucchini. Top with 1/2 the salmon. Pour over 1/2 the egg mixture. Top with 1/2 the remaining zucchini, then remaining salmon; finish with a layer of zucchini. Pour over remaining egg mixture.
  5. Bake 55-60 minutes, until firm. Cool in pan. Slice and serve at room temperature with baby greens and cherry tomatoes.
