Cauliflower And Ham Gratin
- 4 1/2 tbsp butter
- 1/4 cup all-purpose flour
- 1/2 cup milk, warmed
- 2 oz Cheddar cheese, grated
- 2 tsp fresh thyme leaves

- 4 oz macaroni
- 1/2 head cauliflower, cut into florets
- 3.5 oz ham, chopped
- 2 oz peas
- 2 None spring onions, chopped
- 1/2 cup fresh breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1 None fresh chili, finely chopped
- Preheat oven to 400u0b0F. Place 4 individual shallow baking dishes on a baking tray.
- To make the sauce, melt butter in a medium saucepan over high heat. Add flour and cook, stirring, for 1 min. Gradually stir in milk. Cook, stirring, until sauce boils. Simmer for 3 mins then add cheese and thyme. Season to taste.
- Meanwhile, cook pasta in boiling salted water until al dente. Drain. Blanch cauliflower in boiling salted water for 5 mins. Drain and set aside. Return pasta and cauliflower to pan.
- Add sauce to pasta and cauliflower. Add ham, peas and onions. Distribute between baking dishes.
- Combine breadcrumbs, cheese and chili. Sprinkle over pasta and bake for 15-20 mins, or until golden brown. Serve hot.
