Sardine And Garlic Breadcrumb Spaghettini
- 14 oz spaghettini
- 1/4 cup olive oil
- 2 cans (3.75 oz each) sardines in spring water, drained
- 3/4 cup fresh breadcrumbs
- 3 cloves garlic, crushed
- 1/2 tsp red pepper flakes
- 1 tbsp grated lemon peel
- 2 tbsp chopped parsley, plus additional leaves, to garnish
- 1/4 cup grated Parmesan cheese
- Cook spaghettini in a large saucepan of boiling salted water according to package directions. Drain.
- Meanwhile, heat 1 tbsp of the oil in a large skillet on medium heat. Add sardines; toss gently, for 2-3 mins, until heated through. Remove from pan. Add 1 tbsp of the oil to same pan and cook breadcrumbs, garlic and red pepper flakes for 1-2 mins, stirring, until golden. Remove from heat. Add 2/3 of the sardines, lemon peel, parsley, Parmesan cheese and remaining 2 tbsp olive oil; toss gently.
- Add to spaghettini; toss to coat well. Garnish with remaining sardines and parsley leaves.
