Sardine And Garlic Breadcrumb Spaghettini

  1. Cook spaghettini in a large saucepan of boiling salted water according to package directions. Drain.
  2. Meanwhile, heat 1 tbsp of the oil in a large skillet on medium heat. Add sardines; toss gently, for 2-3 mins, until heated through. Remove from pan. Add 1 tbsp of the oil to same pan and cook breadcrumbs, garlic and red pepper flakes for 1-2 mins, stirring, until golden. Remove from heat. Add 2/3 of the sardines, lemon peel, parsley, Parmesan cheese and remaining 2 tbsp olive oil; toss gently.
  3. Add to spaghettini; toss to coat well. Garnish with remaining sardines and parsley leaves.
