Winter Fruit Salad

  1. In a large saucepan, combine 1/2 cup water, sugar, lemon juice and peel, star anise and vanilla seeds. Stir over low heat until the sugar dissolves.
  2. Add the pears, mandarin orange and apricots and bring to a simmer. Cook, covered, for 4-5 mins until the fruit softens slightly. Stir in the raspberries, then remove from the heat and allow to cool slightly.
  3. Serve the fruit and syrup in bowls topped with yogurt.
