Tutti Frutti Quick Bread

  1. Preheat the oven to 350u0b0F. Grease a 9 x 5-inch loaf pan. Line the bottom and sides with parchment paper; grease the paper well.
  2. Place the sugar, butter, apricots, and citrus peels and juices in a medium saucepan on medium heat. Stir without boiling until the sugar is dissolved.
  3. Transfer the mixture to a large bowl. Cool slightly. Stir in the apple, banana and egg. Fold in the sifted flour in 2 batches. Pour into the prepared pan.
  4. Bake for about 1 1/4 hours until toothpick inserted into center comes out clean. Cool in pan 5 mins. Remove from pan; cool completely on wire rack.
