Tutti Frutti Quick Bread
- 3/4 cup sugar
- 4 tbsp (1/2 stick) butter
- 1/2 cup chopped dried apricots
- 1 tsp grated orange peel
- 1 tsp grated lemon peel
- 1/4 cup orange juice
- 1/4 cup lemon juice
- 1 None apple, grated
- 1/2 cup mashed banana
- 1 None egg, lightly beaten
- 2 1/2 cups self-rising flour
- Preheat the oven to 350u0b0F. Grease a 9 x 5-inch loaf pan. Line the bottom and sides with parchment paper; grease the paper well.
- Place the sugar, butter, apricots, and citrus peels and juices in a medium saucepan on medium heat. Stir without boiling until the sugar is dissolved.
- Transfer the mixture to a large bowl. Cool slightly. Stir in the apple, banana and egg. Fold in the sifted flour in 2 batches. Pour into the prepared pan.
- Bake for about 1 1/4 hours until toothpick inserted into center comes out clean. Cool in pan 5 mins. Remove from pan; cool completely on wire rack.
