Fish With Raisin And Almond Rice

  1. Melt half the butter in medium saucepan on medium heat. Cook onion and apple, stirring, without browning, until softened. Add rice and stir to coat in butter mixture.
  2. Stir in stock; bring to a boil. Reduce heat to low; simmer, covered, for 12 mins, until stock is absorbed. Remove from heat. Let stand, covered, for 5 mins. Stir in raisins, parsley and almonds.
  3. Meanwhile, melt remaining butter in large skillet on medium heat. Cook fish for 2 mins each side, or until browned and just cooked through. Serve with rice and lemon wedges.
