Burgers

  1. Combine mushrooms, beef and seasoning blend. Shape into 8 patties. Set aside.
  2. Coat peppers and onion slices in oil then grill for 3-4 mins, until softened. Let cool then thinly slice peppers.
  3. Whisk together lime zest, lime juice and cayenne. Add shredded cabbage mixture, green onion, cilantro, pineapple and apple and toss to combine. Season.
  4. Grill burgers over medium-high heat for 4 mins per side, or until cooked to your liking. Arrange on buns with lettuce, tomato, grilled vegetables and coleslaw.
