Baked Penne With Sweet Potato And Spinach

  1. Preheat the oven to 450u0b0F. Grease a 3-quart baking dish.
  2. Toss the onion, sweet potato and oil in a large baking pan; season. Roast, uncovered, stirring once, for 25 mins or until the vegetables are tender.
  3. Meanwhile, cook the pasta in a large saucepan of boiling water according to package directions; drain.
  4. Combine the pasta in a large bowl with the spinach, ricotta, garlic, cream and tomatoes; season. Spread roasted vegetables in the prepared dish. Top with pasta mixture; sprinkle with nuts and Parmesan.
  5. Bake, covered, for 5 mins. Uncover and bake for a further 5 mins or until browned.
