Baked Penne With Sweet Potato And Spinach
- 2 medium red onions, cut into wedges
- 2 small sweet potatoes, peeled and thickly sliced
- 2 tbsp olive oil
- 13 oz penne pasta
- 8 oz frozen spinach, thawed and drained
- 1 1/2 cups ricotta cheese
- 1 clove garlic, crushed
- 1/4 cup light cream
- 1 can (28 oz) crushed tomatoes
- 1/4 cup pine nuts
- 1/2 cup finely grated Parmesan cheese
- Preheat the oven to 450u0b0F. Grease a 3-quart baking dish.
- Toss the onion, sweet potato and oil in a large baking pan; season. Roast, uncovered, stirring once, for 25 mins or until the vegetables are tender.
- Meanwhile, cook the pasta in a large saucepan of boiling water according to package directions; drain.
- Combine the pasta in a large bowl with the spinach, ricotta, garlic, cream and tomatoes; season. Spread roasted vegetables in the prepared dish. Top with pasta mixture; sprinkle with nuts and Parmesan.
- Bake, covered, for 5 mins. Uncover and bake for a further 5 mins or until browned.
