Duck And Green Bean Gratin
- 1 lb duck confit (about 2 legs)
- 1/4 lb smoked bacon, diced
- 1/2 lb carrots, peeled and finely diced
- 1 None large onion, peeled and finely diced
- 1 clove garlic, peeled and minced
- 1/3 cup tomato puree
- 1 tsp dried thyme
- 2 - 14 oz cans green beans, drained and rinsed
- None pinch paprika
- 1 tbsp butter, melted
- 4 tbsp breadcrumbs
- Preheat the oven to 400u0b0F. Warm the duck, then drain in a strainer and reserve the fat. Heat 2 tbsp duck fat in a large frying pan and saute the bacon and carrots for 2 mins. Add the onion and garlic and cook for 2 mins. Add the tomato puree and dried thyme and simmer for 10 mins, adding a little water if necessary. Stir in the beans and simmer for 3 mins. Add a pinch of paprika and season.
- Spread half the sauce into 4 ramekins. Spoon in the duck meat and top with the remaining sauce. Mix the melted butter with the breadcrumbs and sprinkle over the ramekins. Bake for 20-30 mins, until golden brown on top.
