Mango Chicken Sandwiches
- 1 cup mango and ginger chutney, plus more, to serve
- 1/2 None lime, zested and juiced
- 1 lb boneless chicken thighs, trimmed, flattened
- 2/3 cup Greek yogurt
- 1 tsp curry powder
- 4 None sandwich rolls, split, toasted
- 2 None tomatoes, sliced
- 1 1/2 cups baby spinach leaves
- 2/3 cup cilantro leaves
- In a small bowl, combine chutney and lime juice.
- Add chicken; toss to coat well. Season to taste. Set aside until required.
- Spray an outdoor grill or grill pan with oil; preheat on high. Cook chicken 2-3 minutes each side, until cooked through.
- In a bowl, combine yogurt, lime zest, and curry powder; season to taste.
- Top the bottom of each roll with tomato, chicken, spinach, and cilantro. Finish with a dollop of curry yogurt.
- Serve burgers with extra chutney.
