Indian Rice With Chicken
- 2 tbsp butter
- 1/4 cup uncooked long-grain white rice
- Pinch None ground cinnamon
- Pinch None ground cumin
- Pinch None cayenne pepper
- 1/2 cup reduced-sodium vegetable or chicken broth
- 3 tbsp frozen peas
- 2 tbsp chopped almonds
- 1 None boneless, skinless chicken breast half, diced
- Pinch None paprika
- Melt 1 tbsp butter in a medium saucepan over medium heat. Add the rice, cinnamon, cumin and cayenne and stir for 1 min. Stir in the broth, peas and almonds and bring to a boil. Reduce heat, cover and simmer over low heat for 18-20 mins until the rice is tender and liquid is absorbed. Meanwhile, in a bowl, toss the chicken with the paprika; season with salt and pepper. Melt the remaining 1 tbsp butter in a nonstick skillet over medium-high heat. Add the chicken and stir-fry for 5-6 mins until cooked through. Stir into the rice mixture and mix well. Serve hot.
