Lamb, Feta And Spinach Parcels
- 1 1/3 lbs spinach
- 10 oz feta cheese, crumbled
- 8 None lamb fillets (about 3 1/3 lbs)
- 16 sheets phyllo dough
- Preheat the oven to 450u0b0F. Oil 2 baking pans; line with parchment paper.
- Cook spinach in boiling water until just wilted; drain. Rinse under cold water; drain and squeeze dry. Chop coarsely; mix with feta cheese in medium bowl. Season to taste.
- Cook lamb, in batches, in heated oiled large skillet until browned. Cut lamb fillets in half.
- Stack 4 phyllo sheets, spraying individual sheets lightly with no stick cooking spray. Cut stack in half crosswise; cover with a slightly damp tea towel to prevent drying out. Repeat process with remaining phyllo sheets, so you have 8 phyllo stacks.
- Uncover 1 phyllo stack; place on cutting board. Center 2 pieces lamb on stack; top with one-eighth of the spinach mixture. Roll stack to enclose filling; fold in sides after first complete turn. Place on prepared pan. Repeat with remaining phyllo stacks, lamb and spinach mixture. Spray parcels with cooking spray;
- Bake parcels for 15 mins, or until phyllo is lightly browned.
