Chocolate Chunk & Raspberry Cookies

  1. Preheat oven to 350u0b0F. Grease and line 2-3 baking trays with parchment paper.
  2. Beat butter, sugar, egg and vanilla until combined. Stir in flour, cocoa powder and baking soda until just combined. Fold in chocolate and frozen raspberries. Drop level tablespoons of mixture 2 inches apart on prepared trays. Flatten into 1 1/2 inch rounds. Bake for 15 mins, or until cookies can be pushed gently without breaking. Let cool on trays for 5 mins then transfer to a wire rack to cool.
