Chocolate Chunk & Raspberry Cookies
- 1/2 cup butter, softened
- 3/4 cup brown sugar
- 1 None large egg
- 1 tsp vanilla extract
- 1 cup all-purpose flour, plus 2 tbsp, sifted
- 1/4 cup self-rising flour, sifted
- 1/3 cup cocoa powder
- 1/2 tsp baking soda
- 3 oz semi-sweet chocolate, coarsely chopped
- 4 oz frozen raspberries
- Preheat oven to 350u0b0F. Grease and line 2-3 baking trays with parchment paper.
- Beat butter, sugar, egg and vanilla until combined. Stir in flour, cocoa powder and baking soda until just combined. Fold in chocolate and frozen raspberries. Drop level tablespoons of mixture 2 inches apart on prepared trays. Flatten into 1 1/2 inch rounds. Bake for 15 mins, or until cookies can be pushed gently without breaking. Let cool on trays for 5 mins then transfer to a wire rack to cool.
