Mexican Meatballs Subs
- 1 lb ground beef
- 1 oz taco seasoning mix
- 1/2 cup Italian tomato sauce
- 1 (10 oz) can mixed beans, rinsed
- 1/3 cup sour cream
- 2 None spring onions, finely chopped
- 2 tbsp chopped fresh cilantro
- 4 None hot dog buns
- 3 None lettuce leaves, shredded
- 4 oz shredded Cheddar cheese
- Mix ground beef and taco seasoning together. Shape into 16 meatballs, cover with plastic wrap and chill for 10 mins.
- Lightly coat a large frying pan with oil then place over medium heat. Cook meatballs for 3-4 mins, or until browned. Add tomato sauce and beans. Bring to a boil then reduce heat and simmer for 5 mins, or until meatballs are cooked through.
- Meanwhile, combine sour cream, onions and cilantro in a small bowl. Set aside.
- Fill hot dog buns with lettuce, meatballs and cheese. Top with sour cream mixture. Serve immediately.
