Pork And Sage Pies

  1. Preheat the oven to 350u0b0F. Lightly grease four 1-cup ramekins.
  2. Melt butter in medium saucepan on medium heat. Cook apple and onion for 4-5 mins. Add sugar and mustard. Cook, stirring, for 1-2 mins. Mix in flour. Cook for 1 min. Remove from heat. Gradually add cream, stirring. Return to heat. Bring to a boil. Reduce heat to low and simmer 1-2 mins. Remove from heat. Stir in pork, potatoes, peas and sage. Season.
  3. Divide mixture among ramekins. Cut puff pastry in quarters. Cover each dish with a pastry square. Brush with beaten egg. Pierce tops.
  4. Bake for 15-20 mins or until golden.
