Tofu Sausages With Sautéed Potatoes, Peas And Carrots
- 2 1/4 lb potatoes
- 6 tbsp oil
- 2 None onions, peeled and finely diced
- 2 tbsp butter
- 1 lb carrots, peeled, halved lengthwise and sliced on a bias
- 2/3 lb frozen peas, thawed
- 1 pinch sugar
- 7 oz tofu sausages
- 1/2 bunch fresh parsley, chopped
- Cook the potatoes in boiling water for 25 mins. Drain, plunge in cold water then peel. Set aside to cool. Slice the potatoes on a bias. Heat 4 tbsp oil in a large frying pan and saute the potatoes, turning regularly, until they're golden brown all over. Add the onions and saute briefly.
- For the carrots and peas, melt the butter in a saucepan. Add the carrots and saute for about 5 mins. Add the peas and 1 pinch of sugar and season to taste. Saute over low heat for about 5 mins.
- Meanwhile, heat 2 tbsp oil in a frying pan and cook the sausages. Remove from the pan, cut them into pieces and serve with the potatoes and vegetables, sprinkled with parsley.
