Lemon Meringue Cheesecakes
- 20 None squares graham crackers, coarsely crushed
- 6 tbsp (3/4 stick) butter, melted
- 3 oz cream cheese, softened
- 1/4 cup heavy cream
- 1/3 cup lemon curd
- 1 None egg
- 2 None egg whites
- 1/2 cup plus 1 tbsp sugar
- Preheat the oven to 350u0b0F. Lightly grease four 3-inch tart pans with removable bottoms.
- Process graham crackers in a food processor to fine crumbs. Add butter, processing to combine. Divide mixture among tart pans, pressing firmly into bottoms and sides. Place on baking pan and bake 6-8 mins. Remove from oven and set aside to cool. Reduce oven temperature to 325u0b0F.
- Beat cream cheese and cream in a medium bowl with an electric mixer until smooth. Add lemon curd, egg and 1 tbsp sugar, beating until smooth. Pour into cooled crusts. Bake 15-20 mins, until just set in centers. Cool to room temperature.
- Preheat broiler. Beat egg whites in a small bowl with electric mixer until soft peaks form. Add remaining 1/2 cup sugar, 1 tbsp sugar at a time, beating until mixture is thick and glossy.
- Spoon meringue over cooled cheesecakes using the back of a spoon to create swirled peaks. Broil 1-2 mins, until meringue is lightly golden.
