Onion Turnovers
- 2 c. flour
- 1/2 c. oil or margarine
- 2 sweet Spanish onions, sliced
- 1/2 c. grated Parmesan cheese
- 1 1/2 tsp. salt
- 1/2 tsp. dry basil
- 1/2 c. water
- pepper to taste
- In a bowl, sift flour and 1 teaspoon salt.
- Cut in 3 tablespoons oil and gradually the water.
- Mix thoroughly, adding a little flour, if necessary, until dough does not stick to bowl. Put aside.
- Heat in a frying pan 1/4 cup oil and saute onion until golden.
- Add salt and pepper to taste.
- Roll dough on a lightly floured board to 1/8-inch thickness and cut in 4-inch squares. Put in each square 1 tablespoon of sauteed onion, sprinkling with grated cheese.
- Moisten the edges of the pastry and fold opposite corners together to form triangle, pressing the edges to seal.
