White Chocolate Cupcakes With Baby Footprints (For A Baby Shower)
- 1/2 cup butter, chopped coarsely
- 3.5 oz white chocolate, chopped coarsely
- 3/4 cup firmly packed light brown sugar
- 1/3 cup maple syrup or honey
- 2/3 cup milk
- 1 cup all-purpose flour, plus 2 tbsp, sifted
- 1/3 cup self-rising flour, sifted
- 1 None large egg
- None None Buttercream
- 7 tbsp butter, softened
- 1 1/2 cups powdered sugar, sifted
- 1 tbsp milk
- None None white food coloring
- 12 None yellow jelly beans, halved lengthwise
- None None yellow gel writing icing
- Preheat oven to 325u0b0F. Line a 12-cup muffin pan with paper liners.
- Combine butter, chocolate, sugar, maple syrup and milk in a small saucepan. Stir over low heat until smooth. Transfer to a medium bowl and let cool for 15 mins.
- Whisk flour into chocolate mixture then whisk in egg. Fill each paper liner with 1/4 cup batter and bake for 30 mins. Let cupcakes cool in pan for 5 mins then transfer to a wire rack to cool completely.
- Meanwhile, to make the buttercream, beat butter until as white as possible. Beat in powdered sugar and milk, in 2 batches. Tint buttercream white with food coloring then spread over cupcakes.
- Position jelly bean halves on cupcakes as "feet" and use writing icing to pipe on "toes."
