Frozen Raspberry Gateau
- 1 1/4 cups raspberry sorbet
- 1 1/4 cups vanilla ice cream
- 6 oz fresh or frozen raspberries
- 3.5 oz amaretti cookies, roughly crushed
- None None Fresh raspberries, to decorate
- None None Powdered sugar, for dusting
- Line a deep 8 inch round cake pan with plastic wrap. Place in the freezer to chill. Remove sorbet and ice cream from freezer. Leave for 5 minutes to soften slightly.
- Spoon the sorbet into base of chilled pan. Smooth over surface.
- Fold raspberries into vanilla ice cream, then spoon over raspberry sorbet. Level the surface. Cover with amaretti cookies and press down gently. Cover with foil. Freeze for at least 3 hours until firm.
- Remove from the freezer 5 minutes before serving. Turn out on to a plate. Decorate with raspberries and a dusting of powdered sugar. Slice and serve.
