Bean And Pasta Bake
- 10 oz penne pasta
- 1 tbsp oil
- 1 None onion, chopped
- 2 cloves garlic, crushed
- 3 slices bacon, chopped
- 1 1/2 cups tomato pasta sauce
- 1/2 cup fresh basil leaves
- 2 cans (15 oz each) mixed beans, drained and rinsed
- 1/2 cup pitted black olives
- 2 cups grated mozzarella cheese
- Preheat the oven to 350u0b0F. Cook pasta in a saucepan of boiling salted water according to package directions. Drain, reserving 1 cup cooking water.
- Meanwhile, heat oil in a medium saucepan on medium heat. Cook onion and bacon for 5 mins, or until bacon is crisp. Add garlic and cook for 1 min. Add pasta sauce and reserved cooking water. Increase heat to high and bring to a boil. Reduce heat to low; add basil and simmer, covered, for 5 mins.
- Stir in beans and olives. Toss penne with sauce and three-quarters of the mozzarella cheese. Season well. Pour into a 2 1/2-quart baking dish. Sprinkle with remaining mozzarella cheese.
- Bake for 15-20 mins, until cheese is golden.
