Ham Topped Pineapple And Melted Cheese With Red Potatoes
- 2 1/4 lb red potatoes, scrubbed and thinly sliced
- 4 tbsp canola oil
- 4 None Virginia ham steaks
- 1 None onion, peeled and finely chopped
- 1/2 cup sour cream
- 1 tsp curry paste
- 4 None canned pineapple rings, drained with 2 tbsp juice reserved
- 4 slices Cheddar or Gouda cheese
- 1 tbsp fresh chives, chopped, to garnish
- Boil potatoes in lightly salted water for 5-6 mins or until almost tender. Drain. Heat 2 tbsp oil in a large frying pan and sear ham for 3-4 mins on each side until golden and cooked through. Remove and set aside. Add remaining oil and saute potato slices over medium heat for 5 mins until golden brown, turning occasionally. Add chopped onion and cook for 5 mins. Season. Divide between 4 ramekins and top with ham.
- Preheat broiler. Mix sour cream with curry paste and reserved pineapple juice. Distribute 1 tbsp in each ramekin then top with a pineapple ring and a slice of cheese. Broil for 8-10 mins until cheese is golden and bubbling. Garnish with chives and remaining curry sauce on the side.
