Date Pudding
- 1/4 cup pitted dates, chopped
- 1 tsp baking soda
- 6 1/2 tbsp low-fat spread
- 1/2 cup brown sugar
- 2 None eggs
- 1 tsp vanilla extract
- 1/2 cup self-rising flour, sifted
- None None custard or heavy cream, to serve
- Preheat oven to 350u0b0F. Lightly coat an 8 inch square cake pan with oil. Line base and sides with parchment paper.
- Combine dates, baking soda and 1/2 cup boiling water. Bring back to a boil then remove from heat. Let cool for 10 mins.
- Meanwhile, cream spread and brown sugar until light and fluffy. Add eggs, 1 at a time, beating well after each addition. Beat in vanilla. Fold in 1/4 cup flour along with 1/2 of the date mixture. Fold in remaining flour and date mixture. Transfer to prepared pan, smooth top and bake for 40-45 mins, until a skewer inserted in the center comes out clean.
- Cut into squares. Serve warm with custard.
