Sumac Chicken With Salad
- 2 tsp sumac
- 2 1/2 tbsp vegetable or olive oil
- 2 cloves garlic, minced
- 1 tbsp lemon zest
- 4 (5.25 oz) chicken breasts
- 4.5 oz cherry tomatoes, quartered
- 1/2 None small red onion, thinly sliced
- 1 None fresh long red chili, seeded, thinly sliced
- 1 None medium avocado, chopped
- 1 tbsp lemon juice
- 3 tbsp fresh flat-leaf parsley leaves, chopped
- None None hummus, to serve
- None None Lebanese bread, to serve
- Combine sumac, 1 tbsp oil, garlic, lemon zest and chicken. Heat 1 tbsp oil in a large frying pan over medium heat. Cook chicken for 6-8 mins per side, or until cooked through. Let rest for 5 mins then slice thickly.
- Meanwhile, combine tomatoes, onion, chili, avocado, lemon juice, remaining oil and parsley in a medium bowl. Season.
- Serve chicken with salad, hummus and Lebanese bread.
